My fiance and I seem to eat the same stuff over and over again every week, and I’m looking for something new to cook. Our meals we eat usually are:
-spagetti
-chilli mac
-hamburger or tuna helper
-chicken breasts (with sides)
-tacos
I want to eat more of a variety of meals, because I’m growing bored with our current menu, but I can’t think of what to get. The hard part is that my fiance wont eat anything with mushrooms, onions or peppers in it (he is as picky as a child, I swear!). Any ideas? Thank You!

Chicken Manicotti Alfredo
INGREDIENTS (Nutrition)
3 skinless, boneless chicken breast halves
1/2 cup distilled white vinegar
1 cup olive oil
1 clove crushed garlic
1 (12 ounce) package manicotti pasta
6 tablespoons butter
2 cups heavy whipping cream
1/4 teaspoon ground nutmeg
1 teaspoon ground black pepper
1 1/2 cups grated Parmesan cheese
1 teaspoon salt
1 pint part-skim ricotta cheese
1 egg
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh marjoram
1 tablespoon chopped fresh basil
1 cup shredded mozzarella cheese
DIRECTIONS
CHILLI PLANTSIn a large resealable plastic bag, marinate chicken with vinegar, olive oil, and garlic for at least 30 minutes. Saute in a little olive oil until done. Set aside.
Cook pasta in a large pot of boiling water until al dente. Drain, and set aside.
Meanwhile, melt butter or margarine in a small saucepan over medium-high heat. Add heavy cream, salt, nutmeg, and ground black pepper, and stir until sauce thickens. Reduce heat to low. Add grated Parmesan cheese, and stir until the cheese melts. Set Alfredo sauce aside.
In a large bowl, mix together ricotta cheese, egg, oregano, marjoram, and basil. Mix in cooked chicken.
Stuff cooked manicotti shells with chicken and ricotta mixture. Cover the bottom of a 9×13 inch baking dish with half of the Alfredo sauce. Place stuffed shells on top of sauce. Pour remaining sauce over shells. Top with one cup shredded mozzarella cheese. Cover with aluminum foil.
Bake at 350 degree F (175 degree C) oven for 45 minutes. Let stand 10 minutes before serving.

Ham & cheese-stuffed chicken thighs
Ingredients
Nonstick cooking spray, oil or butter
6 boneless, skinless chicken thighs
freshly ground black pepper
6 half-inch thick sticks of Swiss Gruyère cheese
3 slices air-cured salted ham [Serrano or Prosciutto], cut in half, or an equivalent amount of country ham
3 fresh sage leaves, halved
coarse salt
1/3 cup freshly grated Parmesan cheese
1/3 cup dried breadcrumbs [not fresh]
2 tablespoons unsalted butter, cut into 6 pats
Method
Heat oven to 350°
Spray, oil or butter a baking dish large enough to hold the 6 thighs snugly.
Wash the thighs in cool water, then pat them dry with paper towels. Lay each thigh flat on a cutting board, sprinkle with pepper, and put a stick of cheese, half a slice of ham, and half of a sage leaf in the center of each thigh. Roll the thigh meat around the filling. Place the little parcels seam side down in the baking dish. Sprinkle the tops with salt, pepper, Parmesan and lastly the breadcrumbs. Top each with a pat of butter.
Bake for 25 to 30 minutes, switch the oven to “broil” for the last few minutes if you desire to brown the tops.

I’m gonna share my fav recipe and my fav web site.
Coca-Cola Pork Chops
4-6 chops
1 cup cola
1 cup catsup
brown sugar
s & p to taste
preheat oven to 350
Season chops w/ s & p. Place in 13 x 9 baking dish.
Mix catsup & cola, pour over chops. Sprinkle with brown sugar. Bake uncovered 1 hour and enjoy.

There are sooo many great cookbooks out there for cooking for two. I suggest you go check them out and see what works for you.
Since your hubby-to-be is a bit picky, you will need to look at how to improvise (not using onions, mushrooms, and peppers can really limit alot of things!)
Here’s a fairly fast dinner idea I use from time to time. I like this one because it’s quick and healthy:
1 store-bought rotisserie chicken
Oven-roasted asparagus (recipe below)
Rice pilaf (from a box that you cook on stovetop)

Oven Roasted Asparagus:
1 bunch of asparagus
olive oil
salt and pepper
Preheat oven to 400 degrees.
CHILLI PLANTSWash asparagus, and then snap off each spear about mid way. Pat dry with a paper towel.
Place asparagus in a bowl, give a few shakes of olive oil to gently coat each asparagus spear. Don’t deluge it in oil though.
Arrange asparagus spears on a long, flat baking pan. Shake on some salt and pepper.
Roast for about 10 to 12 minutes. Keep an eye on it. Test for tenderness with a knife or toothpick. If it is easily inserted, then your asparagus is done.

Potato Beef Casserole
4 medium potatoes, peeled and sliced
1 pound ground beef, cooked and drained
1 (10. 75 ounce) can condensed cream of chicken soup, undiluted
1 (10. 75 ounce) can condensed vegetable beef soup, undiluted
1/2 teaspoon salt
In a large bowl, combine all ingredients. Transfer to a greased 2-qt. baking dish. Cover and bake at 350 degrees F for 1-1/2 hours or until potatoes are tender.

Cranberry Meatballs
2 pounds ground beef
1 cup bread crumbs
2 eggs, beaten
2 tablespoons soy sauce
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/3 cup ketchup
1 (16 ounce) can jellied cranberry sauce
1 (18 ounce) bottle barbecue sauce
2 tablespoons brown sugar
1 tablespoon lemon juice
Preheat oven to 350 degrees F. (175 degrees C).
Mix together the hamburger, bread crumbs, eggs, soy sauce, pepper, garlic powder and ketchup. Form into small balls and bake for 30 minutes.
In a saucepan over low heat, combine the cranberry sauce, barbecue sauce, brown sugar and lemon juice. Simmer and stir until smooth. Add meat balls and simmer for I hour. Serve warm.

Pizza Pasta
8 ounces rotini pasta
1 pound lean ground beef
1 small onion, diced
1 (28 ounce) jar spaghetti sauce
4 ounces sliced pepperoni sausage
2 cups shredded mozzarella cheese
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a medium skillet over medium-high heat, cook beef with onion until beef is brown. Drain. Combine beef mixture with spaghetti sauce, pepperoni and cooked pasta and pour into a 9×13 inch baking dish. Top with mozzarella.
Bake in preheated oven for 30 minutes, until cheese is melted and golden.
